soak 1/3 cup of rice for an hour, then put 1/4 of a gallon of milk (any %age) on the gas in a heavy bottom pan on low flame. Once the milk is warm, add in the drained rice and just let it cook for 2-3 hours, stirring occasionally. Then finish with sugar & raisins and allow to cool before putting it in the fridge! Decorate with chopped nuts and enjoy after chilling for 4 hrs.

Stuffed poblano peppers!








Ingredients:

Poblano Peppers, quantity as needed,
Can of black beans,
Salsa, to taste,
Shredded Mozzarella cheese,
1 tbsp cream cheese

Method:

1. Put the broiler on high.

2. Wash the peppers and slit them in half length wise.

3. Put the peppers on a baking sheet, face down and out them under the broiler for 5-7 minutes, until their skins char a little and they soften up.

4. Take them out of the oven, put them in a bowl and cover them with a plastic wrap. This is will allow their skins to separate from the flesh and you can peel it off easily after some time.

5. Drain the can of black beans into a colander and rinse them under running water. Drain again!

6. Put the beans in a bowl and mix in salsa,  1/4 cup of mozzarella and a tablespoon of cream cheese. Check seasonings and adjust to your liking.

7. Pre heat the oven to 350 degrees.

8. Stuff the peppers with the bean mixture and arrange them on a baking sheet. Top each half with  some more mozzarella cheese.

9. Now bake the peppers for 12 minutes, until the cheese melts and the stuffing is heated through.

10. Enjoy the fruits of your labor !!
